Brinjal Kotsu (or) Eggplant Kotsu Recipe

 

Ingredients for Brinjal Kotsu

 

·        Brinjals                   - 5-6 Big

·        Green Chillies         - 6 (Chopped)

·        Onion                     - 2 ( Big)

·        Coconut                 - ½ (Grated)

·        Tamarind juice        - little

·        Turmeric powder    - ¼ spoon

·        Asafetida                - a pinch

·        Mustard                 - 1 tablespoon

·        Urud Dal                - to fry

·        Oil                          - 2 spoon

·        Salt as per your taste

 

Preparation of Brinjal Kotsu

 

  • Cut the brinjals into pieces.
  • Boil little water and cook brinjal till tender.
  • Grind coconut with little water in mixer.
  • Mash the cooked brinjal.
  • Add the mashed brinjal with coconut paste and tamarind juice.
  • In a kadai heat the oil and add mustard.
  • When the mustard splutters add urud dal and fry till golden brown.
  • Add curry leaves, onion and green chillies and fry till the onions turn brown.
  • Now add the brinjal mix, salt and turmeric powder and asafetida.
  • Reduce the heat and stir for 5 minutes.
  • If you want you can garnish with fresh coriander leaves.
