Ingredients:

For the dough:

1.    2 cups of maida

2.    2 tbsp of powdered sugar

3.    ½ tsp of baking soda

4.    ¾ cup of ghee

5.    ghee for deep frying

6.    3-4 tbsp of ghee for spreading in between the layers

7.    300 ml of sugar syrup

8.    4-5 tsp of sesame seeds

Method

Sift the maida, soda and the sugar powder. Mix the ghee into the maida and use your fingers so that the ghee blends well into the maida and resembles bread crumbs.

Add just a little water to form a stiff dough. Divide the dough into four portions. Roll out each portion into a thick chapatti. Place one chapatti on a flat surface.

Spread one tbsp of ghee on it. Place another chapatti on it and then again spread more ghee lavishly on this chapatti and use the rest of the chapattis in the same way.

With a roiling pin, very gently roll out the four layers so that these stick together with the help of the ghee in between the layers.

Take a sharp knife and with the tip of a knife, cut rectangles of 2 inches in length and one quarter in breadth right across all the layers.

Heat enough ghee or oil for deep frying and gently lift each of the rectangles and deep-fry in oil. Fry on low heat and only 2-3 rectangles or bricks at one time.

Remove from oil and drop into a kadhai with the sugar syrup. Allow these to remain in the syrup for half an hour.

Then roll the sugar-coated bricks in the sesame seeds which is spread out on a plate. This mithai stays good for at least 4-5 days.
