For Rasam you can prepare a Rasam powder and keep it. Pepper-100gms, Jeera-100gms, Dhaniya-100gms & Red chillies-50gms. Fry all these ingredients separately in a tawa without oil. cool them to room temperature and grind them in the mixie. Store them in a tightly packed container.
Gramdhal-1tbsp, Dhaniya-1tbsp, Redchillies-6, Jeera-1tsp & Hing-a pinch. Fry all the above ingradients in a tawa with little oil.Add 2 tbsps of fresh grated coconut and grind it to paste. Add this to your sambar instead of ready made sambar mix. You will get a real good old MOM's fresh sambar.
