Hi gals....
U know one thing in my law plac eppa pathaalum coconut chutney...when i came..i started preparing many chutneys.....hehehe..So i got the title Chutni Specialist.....only chutney specialist..nothing than tat i dnt knowwwwwwwwww.....wanna get recipes based on chutney...scrap me which u want ill giv u the method.............................And teach u to get the Title....

Hmmm Hav u ever prepared Thoothuvalai chutney...good for health vai...and for Cold...too....
Hmm... I also had the same problem at my inlaws.... Always Coconut Chutney.... It will be really nice.. but however, used to get bored... My mom prepares sorakaai chutney, kadalamaavu chutney, inji chutney, thuvaram parupu chutney, yam chutney, Vallarai chutney etc., These will be yummy and really different. I always used to carry any chutney that she prepares to my mother-in-laws so that i dont get bored of coconut chutney... i will check with my mother as to how these chutneys will be prepared....
u know wen we started living alone (myself n my hubs alone) .. i wanted to impress him and got recipe for coconut chutney ;) and came home to prepare and it was all chakai .. i called ma friend to ask wht went wrong and we later found out i dint add water coz she dint tell me .. i was a big dumbo .. now am lil ok and cook well :)
have you people tried red capsicum chutney
1 red capsicum, 1 tomato, 1 onion (pref all of the same size)
4-6 red chillies (will be hot if u use 6) - i use 6
salt - 1 spoon
heat little oil, fry red chilli, then onion and then tomato and red capsicum. let it cool.
grind together with salt.
yummy - goes well with Idli, Dosa, Chappathi and also curd rice.
cn anyone tel me how to make groundnut chutney. its often done by mil. so i got bored & never wanted to try it. but wud like to know how to make it..

Gorundnut chutney is very easy.
Take one cup of groundnuts,coconut scraps ( half the cup),little tamarind paste.
Grind all the stuff together.
Now add oil and fry urid dhal,red chillies,curry leaves ,asafoetida and add them to the ground mixture...
That's it....
hmmm vaidehi...thoothuvalai keerai...u ll get..jus clean it ..heat gingelly oil 2 tsp in a pan... fry it ..keep it aside...af=gain in a pan by addin gingelly oil...fry 1 onion 1 tomato...sum 2 pieces of ginger, tamarind(lil)..and salt...and red chilli (4-5)...let it cool....grind it....first thoothuvalai then add ths mixture and grind it...simple...Its very very gud for health...best remedy for cold...same wise thoovalai kuzhambu s good.....ill giv tat recipe too....same type u can apply vallarai toooooo
Capsicum chutney also sounds like a good one. Do we have to use only red capsicum or can we go with green too?

this is the andhra chutney recipe which i frequently do.
ingre:-
onions
tomatoes
garlic -5 to 6 flakes
red chillies
salt
hing
for seasoning:-
oil
curry leaves
mustard seeds
cumin seeds
method:-
grind all the ingrediants.
take a pan.......add oil....after haeting oil.put mustard,cumin.curry leaves.and grinded paste.
cook it for 20 mins in a slow flame.
u can add coriander leaves at the end

Each color gives a diff taste. I have tried only with red capsicum and not green for this chutney.
hey loki this andhra chutney seems to be more or less like tomato chutney in which few add garlic and few dnt. still that's a yummy chutney which i like my son calls that as orange chutney-he loves it.
by the way am jus sharing few north indian receipes like green peas masala in a new blog
instead of red capsicum we can use green capsicum, but dont use tomato, use a bunch of coriander leaves and add 2-3 garlic cloves,add 2 green chili and salt to taste. Fry it and grind well not so smooth. will give a great taste.
Sesame seeds(ellu),tomato,green chillies chutney...
fry seasame seeds in a pan (without oil )
then grind it ... keep it in mixie....
then pour little oil fry green chillies add with sesame powder...
they fry tomato..... mix it with seasame powder,green chillies, add pinch of salt.
grind it....
super chutney ready..... goes with idly,dosai,.chutney...

Spring Onion Chutney ( Vengaiya Thazh Chutney)

Hi friends , i have a recipe called "Tomato masala chutney". This is only for those who likes spicy chutney variety.
Tomato-2
onion-1
bay leaves-1
cloves-2 or 3
red chilli powder-1 tsp
salt
coriander powder - 1 tsp
Heat oil in a pan, add bay leaves, cloves and let it crackle... add onion and fry til golden brown. Add tomato and fry til it becomes soft. add red chilli powder , coriander powder, salt and little of water. bring it to boil and cool it. grind it in the mixer. you can also use butter for flavor if needed. try this and let me know the result from you. This chutney goes well with Idly, Dosa and Chappathi.

Buzzy, for pesarattu, inji chutney is the sariyana jodi..
This is how i do it:
take equal measures of coconut, jaggery, almost the same or a little less measure of ginger, 1tbsp of urad dal, little tamarind, some red chillies, and salt.
heat oil, first goes some mustard, then chillies, then urad dal, then ginger, switch off the flame, add coconut, jaggery and tamarind, and grind it with salt.
Ramya @ happymom, even i tried to make sambar with kadalai paruppu.
In my case, i was damn sure that this is what went into sambar... So i didnt bother to even ask anybody..!
The taste was

Anu & happy mom, same blood for me too..when i was newly married, the very first day after a long gap he went to his office and i prepared food(sambar & potato fry)
I prepared sambar using kadali parupu and he called me from office saying wowwwwwww sambar is too good...hehehhehe enna kodumai ithu
Kogura Chutney recipe.........
Kongura -3 bunches(in tamil - pulachu keera)
to make powder ingre:- ( 1)
red chillies
pepper
mustard
fenugreek
cumin
dhaniya
hing
take a pan don't oil add. plainly fry all above ingreds (1 ). MAKE A FINE POWDER AND KEEP IT ASIDE.
STEP( 2):- Now wash kongura leaves thoroughly. after washing kongura take a clean cloth and place these kongura leaves to dry from water.
after that take a pan add one tblspn of oil and put this kongura leaves.(in a slow flame).
now grind step(1) & step (2). add salt
STEP ( 3) -for seasoning:-
oil
curry leaves
mustard seeds.
after grinding both do step (3)
Sorry wasnt on the blog for a week or so... i have asked my mom for the recipes.. once when she gives them i will share it ..

I started cooking alone after coming to Kuwait only...Else in India I will be yedupudi for my MIL....
I too done sambhar in Kadalai Parupu until my MIL cums to Kuwait...She is one who found that im using kadalai paruppu for sambhar...I asked my mil how to identify thuvaram parupu from kadalai parupu....
Without knowing anything my Appaavi Hubby ate my kadalai parupu sambar & says "yummu sambar"
enna koduma saravanan!!!! hurray to the best sambar of HABI.
i have also dne the mistake but with paitham paruppu but my FIL appreciated for an excellent sambar. That was really gud gals...nambunga pa pls

we can do sambar with paitham paruppu also. will be tasty and a good side dish for pongal. that is not a mistake.
My husband doesnt know the difference between any of these paruppus... he bought kadalai paruppu when asked to buy thuvaram paruppu... and he said he thought it is a better quality thuvaram paruppu as it was "good looking"
The same day he bought shahijeera instead of jeerakam.. he said so many jeera's were there.. he bought the expensive one thinking that it must be the better quality one!!!
