Ingredients:
6 medium sized brinjals
1 bunch coriander leaves - chopped
coconut - half, extracted and chopped
6 green chillies
turmeric powder - 1/4 tsp
chilli powder - 1tsp
garam masala - 1tsp
mustard and jeera - 1tsp
oil - 5 tbsp
salt - to taste
Preparation: Grind the cocunt, coriander leaves and green chillies to a paste in the mixie. Add some salt to this paste while grinding. Slice the brinjals half way through. Fill the brinjals with the above mentioned paste.
Now heat oil in a frying pan. add mustard and jeera and fry. Add the brinjals and fry them. Add the remaining paste to these brinjals and add water so as to make it into a gravy. Add all the masalas - chilli powder, garam masala and trumeric and mix well. Once the mixture comes to a boil, add salt and cook well. Garnish with coriander leaves and serve hot.
